Ingredients

  • 100 g (3.5oz) edamame beans (soya beans)

  • 300 g (11oz) minced (ground) beef 5% fat

  • 5 g (1 tsp) sriracha hot sauce

  • 1 tbsp soy sauce

  • 1 tbsp tomato paste

  • half a tsp garlic paste (or 1 clove, crushed)

  • 1 litre (4 cups) chicken stock

  • 1 heaped tsp garlic paste (or 1 clove, crushed)

  • 1 heaped tsp ginger paste

  • 10 g (2 tsp) sriracha hot sauce

  • 4 spring (green) onions, trimmed and chopped

  • 100 g (3.5oz) beansprouts

  • 180 g (6oz) rice noodles

  • 1 lime, quartered

Directions

  • Place the edamame in a microwaveable bowl. Add water, then cover with cling film leaving a small gap at the side. Microwave on high for 5 mins. Drain.
  • Place the minced beef, edamame, sriracha, soy sauce, tomato paste and garlic paste in a mixing bowl. Mix together with your hands, crushing the beef and edamame to make a gooey paste. Form into 12 meatballs and chill for 30 mins (fridge) or 10 mins (freezer).
  • Heat the chicken stock with the garlic, ginger and sriracha. Drop in the meatballs and cook on a gentle simmer for 10 minutes.
  • Add the beansprouts, spring onions and rice noodles and simmer for a further 2 minutes.
  • Serve each portion with a quarter of lime.
  • Notes
  • Freeze before adding the rice noodles and add the noodles to the reheated ramen and meatballs. Perfect comfort food ready in 5 mins.
