Jersey Royals, Chicken and Spinach

This is a deliciously simple dinner for two.

Ingredients

  • 1 lemon, washed in hot soapy water to remove the wax

  • 1 heaped tsp garlic paste (or 1 clove, crushed)

  • 1 tbsp olive oil

  • salt and freshly ground black pepper, to taste

  • 1 x 150g (5oz) skinless and boneless chicken breast, cut into cubes

  • 350 g (12.3oz) Jersey Royal new potatoes

  • 100 g (1 cup) frozen peas

  • 80 g (2.8oz) asparagus

  • 80 g (3oz) baby spinach leaves

Directions

  • Zest the lemon (with a zester or small side of the grater) and place in a bowl with the garlic, lemon juice, olive oil and salt and pepper. Add the chicken and mix in. Leave, covered and refrigerated, for at least 10 minutes.
  • Bring the Jersey Royals to the boil in salted water. Cook, boiling for 10-12 minutes… until nearly cooked. Add the peas for the last 7 minutes and the asparagus for the last 5 minutes.
  • Heat a lidded frying pan on a medium heat. Shake each chicken piece as you remove the chicken from the marinade and transfer to the pan. Keep as much of the marinade as possible for later.
  • Cook for 5 minutes each side. Turn the heat to low and add the potatoes, peas and asparagus. Then add the marinade from the chicken. Stir through until bubbling.
  • Put the spinach in the pan, place the lid on and cook for 2 minutes. Stir through and serve immediately.
