Savoy Cabbage And Bacon Soup

Ingredients
1 tbsp olive oil
1 onion (or 1 cup frozen), peeled and chopped
1 heaped tsp garlic paste (or 1 clove, crushed)
100 g (1 medium) white potatoes, peeled and chopped
750 ml (3 cups) chicken stock, fresh or made with one cube
200 g (half a small) savoy cabbage, shredded
4 slices of bacon, cut into strips
4 tbsp creme fraiche
Directions
- Heat the oil in a large saucepan and gently fry the onions and garlic for 5 minutes. Add the potato and stock, bring to the boil and simmer for 10 minutes. Add the cabbage and cook for a further 5 minutes.
- Transfer to a blender (possibly in two batches) and blend until smooth. Re-heat the soup gently in the pan. In a separate frying pan dry fry the bacon strips until slightly brown on both sides (4- 5 minutes). Stir the bacon and crème fraiche into the soup.
