Savoy Cabbage And Bacon Soup

  • 1 tbsp olive oil

  • 1 onion (or 1 cup frozen), peeled and chopped

  • 1 heaped tsp garlic paste (or 1 clove, crushed)

  • 100 g (1 medium) white potatoes, peeled and chopped

  • 750 ml (3 cups) chicken stock, fresh or made with one cube

  • 200 g (half a small) savoy cabbage, shredded

  • 4 slices of bacon, cut into strips

  • 4 tbsp creme fraiche


  • Heat the oil in a large saucepan and gently fry the onions and garlic for 5 minutes. Add the potato and stock, bring to the boil and simmer for 10 minutes. Add the cabbage and cook for a further 5 minutes.
  • Transfer to a blender (possibly in two batches) and blend until smooth. Re-heat the soup gently in the pan. In a separate frying pan dry fry the bacon strips until slightly brown on both sides (4- 5 minutes). Stir the bacon and crème fraiche into the soup.
