Ingredients

  • 1 tbsp rapeseed oil

  • 1 red onion, peeled and quartered

  • half a green (bell) pepper, deseeded and chopped

  • 2 pork loin steaks (about 125g each), trimmed & cut into strips

  • 120 g (4.2oz) shiitake mushrooms, washed & quartered

  • 100 g (3.5oz) rice noodles, cooked or fresh

  • 2 tbsp sweet & spicy sauce

Directions

  • Heat the rapeseed oil in a wok or large frying pan over a high heat. When hot, toss in the onion, peppers and pork strips. Cook for 4-6 minutes, until the pork is cooked through.
  • Remove the pork and veggies from the pan with a slotted spoon. Add the shiitake mushrooms and stir-fry for 3 minutes.
  • Add the noodles to the pan, stir-fry for a minute then put the vegetables and pork back in the pan. Reduce the heat, stir in the sauce and cook for a further 2 minutes.
