  • 600 g (21.2oz) lean diced beef

  • 8 tomatoes, roughly chopped

  • 400 g (10-12) new potatoes

  • zest & juice of half an orange

  • 2 tsp cumin seeds

  • 200 ml (scant 1 cup) chicken stock, warmed

  • 1 tbsp tomato paste

  • pinch of sugar

  • 2 bay leaves

  • salt and freshly ground black pepper, to taste

Directions

  • Preheat the oven to 210C/190C fan/400F/Gas Mark 6. Arrange the onion over the base of a deep baking dish. Add the beef, tomatoes and new potatoes. Sprinkle over the orange zest and juice.
