One-pot Mediterranean Beef

Ingredients
1 large onion (or 1 cup frozen), peeled and chopped
600 g (21.2oz) lean diced beef
8 tomatoes, roughly chopped
400 g (10-12) new potatoes
zest & juice of half an orange
2 tsp cumin seeds
200 ml (scant 1 cup) chicken stock, warmed
1 tbsp tomato paste
pinch of sugar
2 bay leaves
salt and freshly ground black pepper, to taste
Directions
- Preheat the oven to 210C/190C fan/400F/Gas Mark 6. Arrange the onion over the base of a deep baking dish. Add the beef, tomatoes and new potatoes. Sprinkle over the orange zest and juice.
- Crush the cumin seeds lightly in a pestle and mortar and sprinkle over the beef. Dissolve the tomato purée and sugar in the chicken stock and pour over the lamb. Tuck in the bay leaves and season generously with salt and pepper. Cover with foil and bake in the oven for 1½ hours, or until the meat is very tender.
