Ingredients

  • 1 tsp olive oil

  • half an onion (or half cup frozen), peeled and chopped

  • 1 heaped tsp garlic paste (or 1 clove, crushed)

  • 1 lemon, washed in hot soapy water to remove the wax

  • 1 x 150g (5oz) skinless and boneless chicken breast, cut into cubes

  • 100 g (3.5oz) basmati rice

  • 250 ml (1 cup) chicken stock

  • salt and freshly ground black pepper, to taste

Directions

  • Heat the olive oil in a large lidded saucepan. Add the onion, garlic paste and lemon zest. Stir in the chicken breast pieces.
  • Add the rice and stir gently until each grain of rice is lightly coated in the oil.
  • Add the chicken stock and bring up to a simmer. Stir once, then put the lid on the pan and turn the heat to low. Cook gently for 12 minutes.
  • Check that the chicken is cooked through and the rice is soft. Add the lemon juice and season with salt and pepper.
  • Divide the chicken and rice between two plates.
  • This dish is also lovely cold the next day or in a lunchbox.
