One Pot Lemon Chicken

minutesThis is a lovely simple chicken dish that you will come back to again and again.
Ingredients
1 tsp olive oil
half an onion (or half cup frozen), peeled and chopped
1 heaped tsp garlic paste (or 1 clove, crushed)
1 lemon, washed in hot soapy water to remove the wax
1 x 150g (5oz) skinless and boneless chicken breast, cut into cubes
100 g (3.5oz) basmati rice
250 ml (1 cup) chicken stock
salt and freshly ground black pepper, to taste
Directions
- Heat the olive oil in a large lidded saucepan. Add the onion, garlic paste and lemon zest. Stir in the chicken breast pieces.
- Add the rice and stir gently until each grain of rice is lightly coated in the oil.
- Add the chicken stock and bring up to a simmer. Stir once, then put the lid on the pan and turn the heat to low. Cook gently for 12 minutes.
- Check that the chicken is cooked through and the rice is soft. Add the lemon juice and season with salt and pepper.
- Divide the chicken and rice between two plates.
- This dish is also lovely cold the next day or in a lunchbox.
