You will love this bung it all in the oven dinner. A polenta crumb is incredibly easy. I use frozen veg but you can use one courgette (zucchini), one yellow pepper and half an aubergine (eggplant).

Ingredients

  • 2 x 150g (5oz) skinless and boneless chicken breast, halved

  • 100 ml (half a cup) buttermilk

  • 150 g (5oz) Mediterranean mixed veg, aubergine, courgette, peppers

  • 1 tbsp olive oil

  • 60 g (2oz) polenta

  • salt and freshly ground black pepper, to taste

Directions

  • Place each half chicken breast on a chopping board and cover with a layer of cling film (wrap). Hit with a rolling pin a few times until about 1cm (half an inch) thick. Place in the buttermilk and leave to rest for at least 10 minutes.
  • Preheat the oven to 220C/200C fan/425F/Gas Mark 7.
  • Place the veg in a large baking dish. Add the oil and mix through thoroughly with your hands. Push the veg to the side of the dish.
  • Place the polenta in a bowl and season with salt and pepper. Toss the flattened chicken pieces in the polenta to thoroughly coat in the crumbs. Place the chicken pieces in the baking dish.
  • Bake for 20 minutes, turning the chicken and veg after 10 minutes, until cooked through and crispy.
