This is a fantastically simple idea which brings poached eggs within the realms of a quick breakfast. Learn this simple technique and you won’t look back.

Ingredients

  • 1 large egg, room temperature (vegan: no alternative)

  • 1 tsp white wine vinegar

  • 125 ml (half a cup) water, boiling

Directions

  • Take a small bowl, cup or ramekin and add the vinegar and water. Use a spoon to swirl the water in the cup.
  • With the water still swirling, break the egg on the side of the cup and lower into the water.
  • Microwave for 30 seconds. Leave to rest in the water for 2 minutes.
  • Scoop out from the water with a spoon and serve immediately.
