minutesOne of my favourite filling lunchtime soups.
Ingredients
1 tbsp olive oil
1 onion (or 1 cup frozen), peeled and chopped
2 carrots, peeled and roughly chopped
30 g (1oz) red lentils
30 g (1oz) puy lentils
30 g (1oz) pearl barley
750 ml (3 cups) chicken stock, fresh or make with one and a half cubes
5 thick slices of good quality ham, cut into bite-sized pieces
100 g (1 medium) white potatoes, peeled and diced
Directions
- Heat the oil in a large saucepan or casserole and fry the onions and carrots very gently for 10 minutes until the onions are transparent.
- Rinse the lentils and pearl barley, stir into the pan and then add the stock. Bring to the boil, cover and simmer for 45 minutes. Add the ham and potato and simmer for a further 30 minutes.
