From Jac’s Sugar Free Challenge: Veggie & Vegan Meal Plan
Ingredients
1 fresh mint, finely chopped
1 sprig basil, finely chopped
1 tbsp extra virgin olive oil
juice of 1 lemon
1 tsp dijon mustard
salt and freshly ground black pepper, to taste
1 x 400g (14oz) can cannellini beans, rinsed and drained
1 red onion, peeled and quartered
large handful fresh fresh parsley, finely chopped
4 tomatoes, roughly chopped
half a cucumber, roughly chopped
Directions
- Place the chopped mint, basil, olive oil, lemon juice and mustard in a small bowl. Add a generous seasoning of salt and pepper. Leave to rest for 5 minutes.
- Place the cannellini beans, red onion, parsley, tomatoes and cucumber in a larger bowl. Pour over the dressing and stir to incorporate. Leave to rest for 5 minutes before serving.
