French Country Salad

  • 1 fresh mint, finely chopped

  • 1 sprig basil, finely chopped

  • 1 tbsp extra virgin olive oil

  • juice of 1 lemon

  • 1 tsp dijon mustard

  • salt and freshly ground black pepper, to taste

  • 1 x 400g (14oz) can cannellini beans, rinsed and drained

  • 1 red onion, peeled and quartered

  • large handful fresh fresh parsley, finely chopped

  • 4 tomatoes, roughly chopped

  • half a cucumber, roughly chopped


  • Place the chopped mint, basil, olive oil, lemon juice and mustard in a small bowl. Add a generous seasoning of salt and pepper. Leave to rest for 5 minutes.
  • Place the cannellini beans, red onion, parsley, tomatoes and cucumber in a larger bowl. Pour over the dressing and stir to incorporate. Leave to rest for 5 minutes before serving.
