This method of cooking new potatoes is so simple and quick. I don’t do it any other way.

Ingredients

  • 150 g (3-4 small) new potatoes

Directions

  • Wash the new potatoes and remove any eyes or brown bits with the tip of a peeler or sharp knife. Unless the potatoes are very small, you should also half or quarter them so they are all roughly the same size.
  • Put the potatoes in a microwave safe bowl and add about half a cup of water. Add a pinch of salt.
  • Cover the bowl with cling film (wrap) leaving about an inch gap at one side to allow steam to escape.
  • Microwave on high for 5 minutes.
