This is a proper detox soup. Really low calorie but full of flavour as well as being beautifully warming.

Ingredients

  • 1 onion (flavour only) (or 1 cup frozen), peeled and chopped

  • 1 carrot (flavour only), peeled and roughly chopped

  • 2 celery stalks, trimmed and roughly chopped

  • 8 black peppercorns

  • 1 tsp salt

  • 2 bay leaves

  • 2000 ml (2 litres) water

  • 1 500g (1lb 2oz) chicken thighs or drumsticks

  • 100 g (1 med/large) parsnip

  • 1 carrot, peeled and roughly chopped

  • 100 g (1 med) white potatoes, peeled and chopped

  • 1 leek, trimmed and cut into rings

  • 1 heaped tsp garlic paste (or 1 clove, crushed)

  • 2 tbsp soy sauce

  • 4 tsp English mustard

  • 4 spring (green) onion, trimmed and chopped

  • half a tsp ground black pepper

Directions

  • Take a large lidded pan and place the onion, carrot and celery inside. Add the peppercorns, salt and bay leaf.
  • Pour in approximately 2 litres water and bring to a simmer. Place the lid on the pan and cook gently either on the hob or in a medium oven (170C fan) for 1½ hours. Add the chicken thighs or drumsticks for the last 30 minutes of cooking time.
  • Strain the broth through a sieve. Discard the vegetables and place the chicken drumsticks on a plate. Leave to cool for 15 minutes or until the drumsticks can be handled comfortably.
  • Return the broth to the pan. Add the parsnip, carrot, potato, leek and garlic to the broth and simmer for about 15 minutes until tender.
  • Remove the skin from the drumsticks and pull the chicken off the bone.
  • Discard the bones, skin and waste and separate the good chicken into 4 portions.
  • Add the soy sauce, English mustard and spring onions to the broth and stir. Add the pepper and taste to check the seasoning. Add the chicken back into the broth.
  • Serve immediately or divide between 4 bowls or containers. The broth can be kept chilled for 2 days or can be frozen. Reheat thoroughly before serving.
