Creamy Baked Salmon with Mange Tout

Ingredients
1 x skinless (approx 130g/5oz) salmon fillet
salt and freshly ground black pepper, to taste
1 tsp olive oil
1 tsp thick mayonnaise
20 g (1 tbsp) natural yogurt
1 tbsp rice wine (or sherry)
a little fresh mint, finely chopped
2 spring (green) onions, trimmed and chopped
100 g (3.5oz) mange tout, trimmed
Directions
- Preheat the oven to 210C/190C fan/400F/Gas Mark 6.
- Place the salmon fillet on a baking tray. Season with salt and pepper and rub the olive oil over the top. Bake in the oven for 16-18 minutes until just cooked through.
- In a small bowl, combine the mayonnaise, yogurt, rice wine, mint leaves and spring (green) onions. Leave for 5-10 minutes for the flavours to develop.
- Boil or steam the mange tout (snow peas) according to the pack instructions.
- Arrange the warm mange tout (snow peas) on a plate. Lightly flake the salmon with a fork and arrange over the mange tout (snow peas). Finally pour over the dressing. Serve immediately.
