Creamy Baked Salmon with Mange Tout

Simple and delicious meal for one. Perfect served with my Microwave New Potatoes.

Ingredients

  • 1 x skinless (approx 130g/5oz) salmon fillet

  • salt and freshly ground black pepper, to taste

  • 1 tsp olive oil

  • 1 tsp thick mayonnaise

  • 20 g (1 tbsp) natural yogurt

  • 1 tbsp rice wine (or sherry)

  • a little fresh mint, finely chopped

  • 2 spring (green) onions, trimmed and chopped

  • 100 g (3.5oz) mange tout, trimmed

Directions

  • Preheat the oven to 210C/190C fan/400F/Gas Mark 6.
  • Place the salmon fillet on a baking tray. Season with salt and pepper and rub the olive oil over the top. Bake in the oven for 16-18 minutes until just cooked through.
  • In a small bowl, combine the mayonnaise, yogurt, rice wine, mint leaves and spring (green) onions. Leave for 5-10 minutes for the flavours to develop.
  • Boil or steam the mange tout (snow peas) according to the pack instructions.
  • Arrange the warm mange tout (snow peas) on a plate. Lightly flake the salmon with a fork and arrange over the mange tout (snow peas). Finally pour over the dressing. Serve immediately.
