Ingredients
1 banana, peeled
2 large eggs, room temperature (vegan: no alternative)
1 tsp mild olive oil
Directions
- Use the back of a fork to thoroughly mash the banana.
- In a separate bowl, whisk the eggs. Add the banana to the whisked eggs.
- Heat the oil in a medium frying pan (skillet) until hot but not smoking. Pour in the pancake mix. Cook for 3-4 minutes, turning if you dare until just cooked but still a little wobbly.
