A lovely simple recipe that makes delicious pancakes with no flour or sugar.
From Jac’s Sugar Free Challenge: Busy + Motivated Meal Plan

Ingredients

  • 1 banana, peeled

  • 2 large eggs, room temperature (vegan: no alternative)

  • 1 tsp mild olive oil

Directions

  • Use the back of a fork to thoroughly mash the banana.
  • In a separate bowl, whisk the eggs. Add the banana to the whisked eggs.
  • Heat the oil in a medium frying pan (skillet) until hot but not smoking. Pour in the pancake mix. Cook for 3-4 minutes, turning if you dare until just cooked but still a little wobbly.
