Ingredients
1 large egg, room temperature
80 g (2.8oz) salad leaves
6 cherry tomato, halved
half a avocado, de-stoned, scooped from the skin and sliced
wedge of lemon
1 tbsp sweet & spicy sauce
20 g (0.7oz) cashews
Directions
- Boil a small pan of water and boil the egg for 8 mins. Cool in cold water, then peel and half.
- Arrange the salad leaves in a bowl or lunchbox and add the cherry tomatoes.
- Add the avocado and squeeze over the lemon juice (this helps the avocado keep its colour).
- Toss through the sweet and spice sauce (do this just before serving for a lunchbox) and top with the egg and cashew nuts.
