This is a bit more than a salad. Full of healthy fats to fill you up and the sweet and spicy sauce makes it a little bit special.

Ingredients

  • 1 large egg, room temperature

  • 80 g (2.8oz) salad leaves

  • 6 cherry tomato, halved

  • half a avocado, de-stoned, scooped from the skin and sliced

  • wedge of lemon

  • 1 tbsp sweet & spicy sauce

  • 20 g (0.7oz) cashews

Directions

  • Boil a small pan of water and boil the egg for 8 mins. Cool in cold water, then peel and half.
  • Arrange the salad leaves in a bowl or lunchbox and add the cherry tomatoes.
  • Add the avocado and squeeze over the lemon juice (this helps the avocado keep its colour).
  • Toss through the sweet and spice sauce (do this just before serving for a lunchbox) and top with the egg and cashew nuts.
